You could include the multi-touch feature that Evert mentioned and for
good measure let the student write a demo game that makes use of
multi-touch.
Also, it's the job of the student to come up with a proposal, the mentor
only need to list some ideas as starting point. They may surprise you.

Asking allegro.cc for volunteers is still a good idea. But at least one
core developer should be willing to devote time to it as well, otherwise
it's not going to work.
