I would ignore the palette problem. It happens with the version that I compiled when 1.7.0 was released. I am assuming it is an SDL problem with my new iMac's graphics card (Intel Iris Pro). 

I also have this palette problem with my MacBook. There is also a problem in Falcon Mode, where SDL menus disapear and Hatari crash at Quit. It's specific to Falcon emulation and is in relation the way the Falcon ROM change resolution 3 times at boot. The last resolution change, SDL palette are scrambled and an SDL object is lost, wich cause a crash in SDL_Quit... No way to change that.

I removed the MacOsX Shortcut (still present in menus, but totally inactives).
Even a PPC (10.5) build ! Not yet a 10.4 build.

If you cannot get SDL to only use the Cmd-M shortcut for Hatari, it is probably best if the OS X version ignores all of the menu keyboard shortcuts like it does in the release version.

Since I do not attempt to support all of the Mac OS X versions that you do, I simply use the SDL 1.2.15 framework found at the SDL website.
