it's done ; for all macOS users, please update you version of Hatari 2.1 
by installing 
http://download.tuxfamily.org/hatari/2.1.0/hatari-2.1.0_3_osx.dmg.zip

This fixes the crash with french language, as well as the inverted 
"reset"/"don't reset" buttons.

Further issues / improvements will be in a next Hatari 2.2 version
