In the git-2.eclass man page there is:

EGIT_BRANCH

Variable containing branch name we want to check out. It can be overriden via env using packagename_LIVE_BRANCH variable.

EGIT_BRANCH="${EGIT_MASTER}"

 

It appears it can be set in ebuild or /etc/portage/env to set the git branch to work from. Not sure if this is what you meant.
