Is it recommended to run jackdmp on any multiprocessor machine?

Yes, jackdmp can split the processing graph, jackd don't.

I have
a quad core, so am naturally interested, but the package doesn't have
any keywording so it seems natural that it's not very well tested. Is
it stable enough to use?

In my opinion, jackdmp is twice as stable as jackd. But you
need to run das_watchdog as well, since jackdmp doesn't provide
it's own watchdog.
