I've never really used key repeat option (from GUI), I just disable
fast-forward temporarily with AltGr-X shortcut.
Any chance this could be added?
You can always give config file (-c) for Hatari with the necessary options:

Yeah, it's true that language setting is missing from GUI.
Nobody's really asked for it to be in GUI, it would be somewhat
complicated (depends on TOS version, specified in another dialog), and
there's not really space for it in current kbd GUI dialog layout (those
are painful to change).
As to repeat & shortcut change functionality missing from CLI...
Those have been thought more of "change once & forget" things, and
latter is also *much* easier to do from the GUI.
