Try with another user account ? To see if there's some specific settings 
saved in your user account, maybe some pulseaudio per application settings ?

As Eero said, I don't see how changing the program name could affect 
Hatari behaviour. It's more something on your system.

Eero saw you had a bluetooth device, did you not by any chance associate 
it to hatari at one time to route the audio ?
